Build the base:
Lay two slices butter side down and layer two slices of pepper jack on each letting them hang slightly over the crust
Add the heat:
Sprinkle chopped pickled jalapeños evenly over the cheese and spread cream cheese on the unbuttered side of your top slices if using
Close it up:
Place the remaining bread on top butter side up creating your sandwich masterpiece
Get cooking:
Heat your skillet over medium heat until a drop of water sizzles then place sandwiches in the pan
Grill to perfection:
Cook for 3 to 4 minutes per side pressing gently with your spatula until golden brown and cheese is oozing out the sides
The resting moment:
